Why Earth to Table?
“I really am at a place where I think we need to feed every child at school for free and feed them a real school lunch that’s sustainable and nutritious and delicious. It needs to be part of the curriculum of the school in the same way that physical education was part of the curriculum, and all children participated.”
-Alice Waters
The big picture is that we restore the soil, grow food in nutrient dense soil that has been restored and we prepare food with ingredients that we know where those ingredients come from, and who was involved in getting the food to where we as consumers obtain it. Planning with the end in mind, we can select what we want to grow and what the soil will need to produce a satisfying harvest. After reading about the Edible Schoolyard and learning how the children grew and prepared meals – The Earth to Table Cycle was a perfect match to empower P.O.P. families with the knowledge that would create self-reliance, sustainable growing practices along with overall well-being.
When children and families explore and experience the Earth to Table Cycle, they begin to look at food, themselves, and the world differently. Respect, connections, harmony, and celebrations of abundance all transpire. Who doesn’t thrive on that?
Soil, not oil, holds the future for humanity”
